Last evening we dropped in for our first pizza. We were greeted with a warm smile and welcoming spirit.  I have not had real pizza since I became gluten free and I was excited.  Home pizza just is not the same. Our pizza was perfect for three reasons:

Digable Pizza is so memorable because NO other pizza joint that I've EVER been to says, "hey, what kind of crust would you like?"  No one!  

When I first got to Asheville, I stayed 2 nights at the Sharkey's hostel down the street from Digable...that's how I learned of this incredible place.  

After the hostel, I ended up camping and hiking in the Blue Ridge Mountains for a week.  When we emerged from the wilderness, my only request was Digable and some desert.

Some years later, I was working on a farm near TN, and when we came to town/Asheville, Digable was all I wanted...  Even now, I'm craving some of their pizza...or at least to find a place that's just as innovative (which probably won't happen in this lifetime, unless they expand to Cali).

I can't talk about any other pizza spot in Asheville, because once I found a good (and unique) thing, I just stuck to it.  I mean, I stumbled upon it within my first hours in the town -- how lucky is that?!

Before heading back home – we had to try a recommendation we received from the Laughing Seed Cafe Staff for the best Pizza in Asheville – Digable Pizza, who uses as many organic and local ingredients they can!

Whenever getting pizza, I always start with a huge salad… and then order the pizza with even more vegetables

I definitely over did it and had too many pieces of this wonderful Spelt Crust Pizza…. I slept like a baby in the car, while my husband drove home – and I didn’t wake up until we reached Earth Fare to load up for the week!
